My goal everyday is to start the day with my workout, and a quick healthy breakfast. Now, everyday doesn’t always go as planned, because of appointments and projects, but I try to stick to this routine as much as possible. I recently found this great recipe for a breakfast parfait, that is easy to make, and full of such great, healthy ingredients, I just had to share it with you. I’m very much a sweets person, so when I find something sweet and good for you, I’m all in.
After my workout, and my coffee of course, I try to load myself with foods that are healthy and that gives me energy from the inside out, and this delicious granola and yogurt parfait does just that. It’s loaded with super ingredients like nuts, oats and yogurt, and it really can be eaten as an energy boosting breakfast, or a healthy dessert. The bonus of this perfect parfait, is that it takes very little time to make, it includes natural ingredients, and it can even be prepared in advance. Also, as a side note, if you’re looking for good workout gear, I love the Express (EXP) Core gear I’m wearing today. I have quite a bit of their EXP Core items, and I love the quality, the fit, and the fact that it transitions well for running errands.
Now, let me share how you can bring some healthy greatness to your breakfast.
Ingredients For 4 Servings:
1 cup of granola – I use Bear Naked (Bearly Processed) V’Nilla Almond Granola (It’s low calorie, low fat, and low sugar)
2 tablespoons chopped walnuts
2 tablespoons chopped pistachios
3 tablespoons chopped almonds (If using granola without almonds)
2 tablespoons reduced sugar craisins (Dried Cranberries)
3-4 cups of Greek nonfat plain or vanilla yogurt
Instructions To Make The Parfait:
Make layers of yogurt and granola (Typically 2 layers)
Top with fruits and nuts (Dried cranberries, walnuts, pistachios, almonds)

Lovely post! I try to get my workout out of the way too in the morning, but always have to get something to eat on the way to work. I like that this parfait can be made in advance, I’m going to try doing it the night before! You and your kitchen are both gorg!!!!
